A little Bagel trivia

Did you know when making a Bagel that most places will boil the dough till the bagel floats? Then the bagel will be topped and baked.
There is also another way this can be achieved. You can put the bagels in a proof box. (This is a hot steamy box) after it has achieved a certain temperature it will be tested to see if it will float. When the bagel floats then you can top it and bake it. You will still get that chewy consistency
Today I know of at least 29 different bagel flavors. I am sure there are more out there.
Plain, Wheat, snicker doodle, French toast, blueberry, cinnamon raisin, cranberry orange, garlic, pesto, sundried tomatoe, egg, cinnamon chip, chocolate chip, jalapeno, sesame, poppy, onion, everything, NY rye, pumpernickle, pizza, pepperoni pizza, pretzel, cheddar, asiago, chevy, Jalapeno pepper jack, Bacon Cheddar chive..... MMM all very good.
A little tidbit more
If you like to toast your bagel you will get the best results if you slice it with a sharp knife. A dull knife will bunch the bagels insides and therefore the bagel will not brown evenly.
Most likely it will just cook the edges.
Bagel sandwiches
Did you know that bagels make the best sandwiches? I have had the experience of having a hot pastrami Ruben on an everything bagel. Super yummy.
And have you ever considered a breakfast sandwich? My favorite is the sausage and egg with a Havarti cheese melted between the egg and sausage.
(The bagel must be toasted when you eat the sandwich as the bagel is rather chewy and the ingredients may slip out of the bagel. When toasted it softens the bagel just enough to keep the ingredients in tact.)
Holiday Bagels
I have come across some holiday bagels. Pumpkin, which I like just with a little butter, and eggnog, adding a little honey walnut cream cheese, gives a nice festive flavor. There is also a cranberry cream cheese that goes really well on a turkey sandwich.
